Chickpea and Avocado Spread

My friend posted this recipe on facebook the other day.  Don’t let the chickpeas fool ya.  It’s super easy for a lunch or dinner on the go and tastes amazing.  I’m excited about the leftovers waiting for me for my lunch tomorrow.  I topped it off with a spoonful of salsa for a little kick.  Yum!!  I’m sure it would also taste great topped with some pepperjack cheese and tomatoes or other sandwich fixings.

Ingredients 

  • 1 can of chickpeas, drained and rinsed
  • 1 large avocado
  • 1/4 c chopped cilantro
  • 2-3 green onions
  • juice from 1 lime
  • salt & pepper to taste

Mash together the chickpeas and avocado.  Add the cilantro, green onion, lime juice, salt, and pepper.  Top with whatever sounds good and enjoy.
