Dinner on the run – Spicy mango veggie burgers and grilled pineapple

It’s a beautiful Minnesota summer day and the trails are calling my name.  So when it came time to decide what was for dinner, I wanted something quick and easy that was also healthy and went great with a beer (ok, maybe not the best pre-run hydration).  This is one of my go to dinner in a hurry staples: Spicy mango marinated veggie burgers topped with grilled pineapple.  Finish topping it off with a little fresh baby spinach and spicy light mayo (light mayo with some chipotle powder, chili powder, onion powder, and garlic powder to taste), and you’ve got a veggie burger that bites back.  Pair it with some spicy sweet potato fries on the side, and dinner in under 20 minutes, but it tastes like it took so much longer.  The beer is optional 🙂
